 I can think of a few I have read about.

Broadcast Overlay. Setting to zero gets rid of the position graphics that
popup during a race.
AI max texture size. setting to zero gives you that high res textures. If
you are short on video ram (depends on res and AA settings) this might slow
things down.
Cockpit shake. setting to zero stops the cockpit shake.
rearview mirror shake. ditto for the rear view mirror.
self in rearview. setting to zero remove the back of the car in the mirror.
Gives you a better view of the guy about to pass you!
glance rate. lowering this value will slow down the look left/right pan.
no ai control. setting this to 1, will stop the game from removing you from
the car when your car become unservicable.

WOW! I was very pleased to realize that I was looking at 2004 cup servers
and only saw 2. Switched to 2005 and viola!, there were plenty. Now I only
have to try them!:-)­
